Noel Gideon Jackson is a Food Scientist and Technologist specializing in the development of novel food products with a strong focus on food safety, quality assurance, and sustainable food systems. His research interests center on creating value-added products from underutilized cereals, fruits, and vegetables, including their by-products, to enhance food utilization and contribute to food security. He holds both a Master of Science in Food Safety and Quality Assurance and a Bachelor of Science in Food Science and Technology from Sokoine University of Agriculture, Tanzania, and is deeply interested in innovative technologies to improve food quality, safety, and functional properties for sustainable food systems. He is currently an Assistant Lecturer in the Department of Food Science and Technology, College of Agricultural Sciences and Food Technology, at the University of Dar es Salaam. In this role, he teaches Food Science and Technology courses, develops instructional materials, and evaluates student learning, while contributing to academic and research activities that support the advancement of sustainable and secure food systems.
